Nori has a high protein content of up to 48% dry matter. Also very rich in polysaccharides, it contains provitamin A, vitamin B12, potassium, magnesium, calcium and eicosapentaenoic acid, a fatty acid known to thin the blood. This action is further increased by the presence of taurine, a relatively rare free amino acid, which gives enormous value to this alga whose regular consumption has preventive effects against certain cancers, so very good for health, in general.
Nori's flavor is musky, reminiscent of smoked green tea. For some, the taste is more terrestrial than marine, which makes its notoriety! This notoriety is due to its very important protein intake - 10g of Nori = a rib of beef!
